While our photo does not look as excellent as the posting below, my kids & all of us loved this recipe. We had it with some salad on the side & no one missed the missing carbs.
I doubled the recipe as we had 10 people at the table. It was yummy!
Ingredients
- 6 mahi mahi fillets (roughly 6–7 ounces per fillet). We used Wild Mahi Mahi from Costco
- 1 cup tapioca flour
- 2/3 cup almond flour
- 2 tablespoon onion powder
- 3 teaspoons salt
- 3 eggs
- 4 tablespoons coconut oil
- 1 lime (Optional)
Instructions
- Using kitchen shears or scissors, cut the mahi mahi fillets into roughly 1.5″x1.5″ cubes. Set aside
- Combine the tapioca flour, almond flour, onion powder, and salt in a large bowl or container
- Whisk the eggs in a separate bowl or container
- Heat a large skillet over medium-high and add the coconut oil
- Working in batches, place the mahi bites into the whisked eggs, then into the flour mixture, shaking the bowl or container to coat the fish evenly
- Transfer the fish into the hot coconut oil and fry for 1 minute, then using kitchen tongs, flip the bites and fry an additional 45 seconds – 1 minute. From there, flip the fish bites on the sides not yet fried, for roughly 30 seconds, just until all the sides of every piece are golden. You may have to work in batches to avoid overcrowding the pan
- Cut the lime in half and spritz with lime juice before serving (Optional)
